Lentil and Carrot Patties

Another healthy recipe from the Petrea King Food for Life Cook book.

Those who are wheat intolerant can omit the breadcrumbs and use polenta instead.  Very good served with sweet chilli sauce.

Ingredients (serves 4)

  • 500g red lentils, washed and drained 
  • 1 spanish red onion, finely chopped
  • 500g grated carrot
  • 100g flaked almonds
  • 100g fresh breadcrumbs or ½ cup polenta
  • 1 cup chopped fresh herbs (parsley, oregano, mint, basil, dill etc)
  • 2 eggs, lightly beaten
  • 1 red chilli, seeded and chopped
  • Sea salt and black pepper
  • Sesame oil or extra virgin olive oil
  • Lemon wedges for serving

  

Method

    1. Place the lentils in a saucepan and cover with cold water.

    2. Bring to the boil and simmer for 25 minutes or until soft.

    3. Drain well and place in a large bowl.

    4. Combine with the onion, carrots, almonds, breadcrumbs or
       
polenta, herbs, eggs, chilli and salt and pepper.

    5. Place in the fridge to firm up.

    6. Using a spoon and one hand, form the mixture into patties.

    7. Heat a large frying pan and add a little sesame oil.

    8. Fry the patties in batches until golden and cooked.

Serve with lemon wedges.
