Rainbow Couscous

Ingredients (Serves 6)
- 500ml homemade chicken stock
- 2 tbspns lemon infused olive oil
- ½ tsp ground allspice
- ½ tsp ground cumin
- ½ tsp ground coriander
- 1 tsp caraway seeds
- 2 small red chillies finely chopped
- 1 lemon, zest and juice
- 600g cous cous
- 1 medium red onion chopped
- ½ green capsicum chopped
- ½ red capsicum chopped
- 2 corn cobs, blanched for 5 minutes, refreshed in cold water and kernels removed
- 1 cup fresh peas, blanched for 5 minutes and refreshed in cold water
- 1 cup macadamia nuts roasted and coarsely chopped
- 1/3 cup of chopped coriander
- 1/3 cup of chopped parsley
- Salt and pepper
Method
1. Combine chicken stock, oil, spices, chillies, lemon juice and zest in a saucepan, bring to the boil.
2. Pour over cous cous in a large bowl, stir with a fork to separate grains
3. Add all other ingredients.
