1. Heat the oil in a large saucepan and add the onion. Gently cook until
soft and golden.
2. Cut the corn kernels from the cobs and add to the onion along with the
chopped zucchini. Cook for a couple of minutes while stirring.
3. Add the vegetable stock and bring to the boil.
4. Simmer for 12 minutes or until the corn is tender and the zucchini
cooked.
5. Remove from the heat and add the basil. Blend using a stick blender or
food processor.
6. Season with sea salt and freshly ground pepper and garnish with
chives.
